Salted Mocha Biscotti

Hello, are you all ready for the Easter weekend (aka the time of the year when it is socially acceptable to eat chocolate at every meal)? I am about to spend four days in Scotland with my husband: we will fly to Glasgow tomorrow and hire a car for a mini road trip around the Highlands. I cannot wait!
Before I go though I want to share with you a few photos of the Salted Mocha Biscotti I have made this week! My friends Hannah and Sam made these twice-baked gluten-free cookies for my birthday in January and then again for our Blog 'n' Bake brunch. They can be really addictive (probably because of the coffee!) so the other evening I finally baked a batch myself!
Unfortunately the recipe by Paleo Parents is exclusive to their Beyond Bacon cookbook, so I cannot publish it on my blog. :(
However you can find a recipe on their blog called Choffy Biscotti which is an adaptation of the Salted Mocha one. They have substituted the ground coffee and cocoa powder with brewed chocolate, but the recipe is pretty much the same.
These biscotti are paleo, which means they do not contain refined sugar and are gluten and dairy free. They are not low in calories though, because of the almond flour (I have calculated that each cookie packs around 150 kcal). They are perfect if you have an active lifestyle; they will give you the energy and coffee kick you need to get through the day!
