Aloo Amritsari

Today's post is a typical Punjabi recipe presented by Mahindra Homestays. I tried the recipe myself a few days ago - with the valuable help of my fiancé - and took the photos of the preparation and end result. Hope you'll enjoy!

Punjabi is well known for its warm hospitality and mouth watering cuisine. Sinfully delicious and rich in taste, Punjabi food is popular world-over. Many famous dishes seen on take-away menus all over the world originate from this region, such as the much loved tandoori food.

The region is known for a great variety of vegetable dishes, most frequently flavoured with onion, ginger and garlic.

A popular vegetarian dish is Aloo Armirtsari, a well flavoured potato dish. This is a fairly easy recipe to try and it should take you less than 30 minutes to create this great Indian Punjabi dish.

Ingredients

* 2 Aloo (potatoes) * 2 onions * 2 tsp ginger-garlic paste * 1/2 tsp Ajwain * 1/2 cup Besan * 1 tsp Coriander Powder * 1 tsp Red Chilli powder * 1/2 tsp Garam Masala * 1/2 tsp Annardana Powder * Coriander leaves

Preparation

Cut the potatoes into long pieces which will be easy to cook. Ensure that they are not too fat. Next, make a thin batter of besan, salt, ginger-garlic paste and ajwain seeds adding little water. Add 1 tsp of oil and mix well. Marinate the potato pieces for 15 minutes.

Heat the oil and deep fry the potatoes and then keep them aside. Then heat 2 tsp of oil, add onions and sauté them till brown. Add salt, turmeric powder, coriander powder, red chilli powder, annardana powder, Garam masala and mix well.

Add the potatoes and toss well. Simmer the flame and cook for another 5- 6 minutes. Garnish with coriander leaves and serve Punjabi Aloo Amritsari hot with any Indian bread.

Hi,<br /> <br /> You did not indicate where the coriander powder should go into. The besan paste or direct into fry pan with onion, cili powder &amp; turmeric. I am frying the potatoes now and have just realized that. <br /> <br /> I guess I will add it to the fry pan with the onions etc.
